Cheesy Sour Cream Potatoes With Ham |

This is a very easy comfort food dish that looks good enough to be served to company. There is a lot of room for play with adding whatever spices/flavors you like. Ingredients:
small new red potatoes, quartered |
1 can cream of chicken soup (or cream of mushroom, if you prefer) |
1 cup sour cream (or more) |
1 cup shredded cheddar (or whatever cheese you like) |
diced ham - i used 12.5 oz. can of premium diced ham (harvest creek from costco) |
1 tbls. dijon mustard (optional, i like the slight tang it gives to these) |
roasted garlic and red bell pepper seasoning (mccormick's) (optional) |
salt and pepper to taste |

Directions:
1. Bring large pot of water to boil with potatoes (I don't know the lbs.) I just measured by putting them (prior to cutting/cooking) in the 9x13 dish to see how many would fit. I think about 15 or 20 depending on size 2. Boil potatoes until firm fork tender, about 10 minutes (check before 10) 3. Drain potatoes and put in large bowl ( or back in the pan used for boiling) 4. Mix soup, sour cream, cheese, ham, mustard, and seasonings (except paprika) 5. Add to potatoes 6. Spread into lightly greased 9 x 13 dish, sprinkle with paprika 7. Bake in preheated 350 degree oven approximately 45 minutes till bubbly 8. I served with green beans, a complete meal! |
