Cheesy Scalloped Potatoes |

This is a long time favorite recipe which goes well with a pot roast or ham. It's not a trendy new recipe but a classic that has stood the test of time. Ingredients:
8 ounces shredded cheddar cheese |
1/4 cup butter or margarine |
1/4 cup all purpose flour |
2 cups milk |
1 teaspoon salt |
1/4 teaspoon pepper |
5 medium potatoes |
2 small onions |
Directions:
1. Shred cheese. 2. Set the cheese aside. 3. Melt the butter over low heat. 4. Blend in the flour. 5. Add milk all at once. 6. Stir constantly until slightly thickened. 7. Add shredded cheese. 8. Season with salt and pepper. 9. Continue to cook, stirring, until cheese melts. 10. Remove from heat. 11. Spread half of the cheese sauce on the bottom of a shallow 2 1/2 quart baking dish. 12. Slice potatoes and onions thinly. 13. Arrange potato and onion slices over the cheese sauce. 14. Spread remaining cheese sauce over the top. 15. Bake at 350 degrees F until potatoes are tender, about 1 hour. |
