The texture of these rolls is reminiscent of an English muffin or biscuit. Use two to assemble an egg McMuffin type breakfast sandwich; or use for a ham sandwich, etc. Don't worry - these don't taste like coconut. However, I find them a little eggy when eaten plain - yummier in sandwiches. Try variations with onion powder or chives. Low-carb and soy-free. Ingredients:
1/4 cup butter (melted) |
4 eggs |
1/4 teaspoon garlic salt |
1/4 teaspoon garlic powder |
1/3 cup coconut flour (sifted) |
1/4 teaspoon baking powder |
4 ounces sharp cheddar cheese (grated ( about 1 cup) |
Directions:
1. Whisk together butter, eggs, salt, garlic salt, and garlic powder. 2. Combine coconut flour and baking powder. 3. Whisk the dry ingredients into the wet ingredients. 4. Fold in grated cheese. 5. Drop in mounded spoonfuls on cookie sheet sprayed with nonstick spray. 6. Bake at 400 degrees for about 17 minutes, until lightly browned on top. |
