Cheesy Rice With Hard Salami |

Meal in a pot. Main or side dish. Rice doesn't have to be that white lump of stuff that serves as a bed for something else. It can be colorful and flavorful and tasty and stand on its own with the addition of a few spices and a bit of other ingredients. Ingredients:
3c water |
1c uncooked long grain white rice |
1/4c dried sweetened cranberries or rasins |
1c hard salami,1/2 cubed |
1/2t chinese 5-spice |
1/2t turmeric |
1/2t salt |
2t butter |
4oz pasturized processed cheese, cubed, ex: velveta |
Directions:
1. Bring first seven ingredients in a medium sauce pan to a boil then cover and reduce to simmer for 25 minutes. 2. Remove from heat; add butter and cheese, stir to melt. 3. Maybe try it next time with some sharp cheese or mozzerella added. Change up the spices some. Maybe add some garlic or ginger powder. If you are cooking for yourself, save a plate and eat it right out of the pot. |
