Lowfat casserole with brown rice, broccoli, chicken, and cheese... Ingredients:
16 oz skinless chicken breast |
2 cups broccoli florets |
2 cups brown rice |
16 ounce low fat cheddar cheese, shredded |
2 cloves garlic, minced |
3 cups bread crumbs |
Directions:
1. Directions 2. Prepare & cook rice, set aside. Preheat oven to 350 degrees. 3. Cook chicken in water and a little chicken broth with salt and pepper to taste beforehand, as with the rice. 4. Saute vegetables in butter until very soft, over medium low heat with lid. 5. In a large mixing bowl, mix the cheese, soup, garlic and broccoli. Lightly fold in the cooked rice. 6. Cut chicken into cubes and add to rice mixture. 7. Coat a casserole dish with Pam cooking spray. Pour mixture into the dish and bake, covered, for 30 minutes or until cheese melts & heated through. |
