Ready, Set, Cook! Special Edition Contest Entry: My family loves potatoes and cheese, hence this cheesy potatoes casserole recipe. Ingredients:
1 (16 ounce) package simply potatoes diced potatoes with onion |
1/4 cup red bell pepper (finely chopped) |
1 (10 ounce) can cheddar cheese soup |
1/4 cup bacon (cooked and crumbled) |
1/4 cup goat cheese (crumbled) |
2 tablespoons butter |
1/4 cup green onion (thinly sliced) |
Directions:
1. Preheat oven to 350°F Spray an 8x8 inch baking dish with non-stick cooking spray. Evenly spread half of the potatoes in the pan. Sprinkle 2 tablespoons of red bell peppers and 2 tablespoons of bacon bits over the potatoes. Spoon half of the can of cheese soup over the potatoes, peppers, and bacon bits. Add a second layer of potatoes, peppers, and cheese soup. Top with goat cheese, bacon bits, and green onions. Cover and bake for 30 minutes. |
