Cheesy Potato Topped Chicken |

Have served this at a recent dinner party..enjoyed by all. Ingredients:
3 medium potatoes, grated |
1 medium onion, grated (i use a red onion) |
1 cup grated parmesan cheese |
2 teaspoons chopped fresh thyme or 1 teaspoon dried thyme |
1 teaspoon chicken stock powder |
1/2 teaspoon fresh ground black pepper |
1 egg yolk |
1 kg chicken breast fillet |
cooking spray |
Directions:
1. Combine potatoes, onion, cheese, thyme, stock, pepper and egg yolk in a medium bowl. 2. Place chicken breasts on wire rack over an oven tray. 3. Press potato mixture on top of chicken; coat potato mixture with the cooking spray. 4. Bake, uncovered, in a hot oven about 30 minutes or until chicken is tender. 5. Then place under grill until topping is browned. |
