Got this from a local grocery store holiday book. I have not tried this yet, but it is on my list! Serving size is 2 cups. Ingredients:
1 1/2 cups carrots, peeled and chopped |
5 cups potatoes, peeled and chopped |
3 stalks celery, chopped |
1 teaspoon salt |
1/2 teaspoon pepper |
6 cups water |
12 ounces evaporated milk |
2 tablespoons fresh parsley, chopped |
1 cup milk |
1 lb velveeta cheese, cubed |
2 cups ham, diced |
Directions:
1. Combine carrots, potatoes, celery, salt and water in 5 quart pot. 2. Boil 20 minutes. 3. Remove from stove and slightly mash mixture. 4. Add evaporated milk, parsley, milk, cheese, ham and pepper. 5. Return to stove and heat until bubbly. 6. Can top with crumbled bacon, green onions, sour cream, Fritos. The list goes on! |
