This recipe I just whipped up cause I was bored and was in the mood for potato skins lol. The measurements are a rough guestimate, because I never measure my cheese or anything hehe. Enjoy!! Ingredients:
4 medium russet potatoes |
2 cups of shredded colby monterey jack cheese |
3 green onions, sliced |
3 tablespoons bacon, crushed up into bits |
Directions:
1. Scrub the potatoes in a sink and poke a couple times with a fork. Place in the oven for about 1 1/2 hours or until soft. Remove and cool to touch. 2. Cut potatoes lenghwise and scoop out potato leaving a 1/4inch left on the rims. 3. Top the potatoes with cheese, garnish with green onions and bacon. 4. Place back in the oven and cook for an additional 5-8 minutes or until cheese is melted. 5. Serve with Sour Cream if desired. Enjoy! |
