easy cheesy potato pancakes are great at breakfast and can be eatened anytime of day snacks etc. Ingredients:
1-1/2 quart prepared instant mashed potatoes, cooked dry and cooled |
1-1/2 cups (6 ounces) shredde colby or munester cheese |
4 eggs, lightly beaten |
1-1/2 cups all purpose flour |
3/4 cup fresh or dried parsley |
1/3 cup fresh or dried chives |
1 -1/2 tsp dried sage (optional) |
2 eggs lightly beaten |
Directions:
1. In large bowl combine potatoes, cheese 4 beaten eggs 2. 3/4 cup of flour and herbs; mix well 3. TO PREPARE 4. from 15 (3 inch) patties 5. dip in 2 beaten eggs and dredge in remaning 3/4 cup flour. 6. cook each patty in nonstick skillet over medium heat 3 minutes per side or until crisp 7. Serving suggestion:Serve with eggs or omletes, sour cream . |
