these are a little different than I make mine but it sounds good and I want to make them soon.. the recipe is from the Florida Vegetable Council Ingredients:
1 3-ounce package cream cheese, softened |
2 eggs |
2 tablespoons all-purpose flour |
4 cups potatoes, peeled and shredded |
1/4 cup swiss cheese, shredded |
2 tablespoons onion, grated |
1/4 teaspoon salt |
1/8 teaspoon pepper |
cayenne pepper to taste... |
3 tablespoons vegetable oil |
Directions:
1. In a mixing bowl, beat cream cheese until smooth. 2. Add eggs, one at a time, beating well after each addition. 3. Add flour; mix well. 4. Stir in potatoes, Swiss cheese, onion, salt, pepper and cayenne pepper. 5. Scoop out a heaping tablespoon of the latke mixture into in hot oil to fry. Repeat with remaining latkes, cooking 4 to 5 patties at a time, flipping when golden on the first side. 6. Do not crowd pan or they will not brown and crisp properly. 7. Drain latkes on paper towels and keep warm in the oven at 250 degrees F until all are completed |
