These tasty twice baked potatoes are easy to make and have a cheesy center surprise. Ingredients:
6 large baking potatoes |
1/3 cup butter or margarine |
3 tablespoons milk |
1 (8 ounce) package cheddar cheese, cut into 1-inch cubes |
2 tablespoons bacon bits |
12 broccoli florets, blanched, drained (optional) |
Directions:
1. Preheat oven to 350 degrees F. 2. Pierce potatoes with fork. Bake 1 hour. Let stand 5 min. 3. Cut potatoes in half crosswise; scoop out centers, leaving 1/8-inch-thick shells. 4. Place potatoes in large bowl. Add butter and milk; beat with electric mixer on medium speed until fluffy. (If potatoes are dry, beat in small amount of additional milk.) 5. Spoon evenly into shells; lightly press 1 cheese cube in center of each potato. Place potatoes in muffin pan. 6. Bake 30 min. or until heated through. 7. Sprinkle each with 1/2 tsp. bacon bits. 8. Top with broccoli (if desired). |
