A great side for Thanksgiving or Christmas...even a potluck or besides Sunday's roast. Ingredients:
2 lbs red potatoes |
1/4 cup butter, melted |
1/2 cup green onion, sliced thin |
1 teaspoon salt |
1/4 teaspoon pepper |
8 ounces sour cream |
2 -3 bacon, slices cooked crisp (optional) |
1 (10 3/4 ounce) can cream of chicken soup, undiluted |
2 cups shredded cheddar cheese |
buttered breadcrumbs, amount to taste |
Directions:
1. Cook potatoes in boiling water until tender; drain and cool. Peel and cut into 1/4 slices; set aside. 2. Combine 1/4 cup butter and next 6 ingredients in a large bowl. Gently stir in potatoes and cheese. 3. Spoon into a lightly greased 13x9x2 inch baking dish. Sprinkle over potato mixture with buttered breadcrumbs. 4. Bake, uncovered for 350 degrees for about 25 minutes. |
