This is a great side dish. I cook mine in the crockpot if you want to prepare in advance. Great potluck dish. Ingredients:
1 lb potato |
1 leek |
3 garlic cloves |
1/2 cup grated cheddar cheese |
1/2 cup grated mozzarella cheese |
1/4 cup grated parmesan cheese |
2 tablespoons chopped fresh parsley |
2/3 cup light cream |
2/3 cup milk |
1/2 teaspoon salt |
1/2 teaspoon pepper |
Directions:
1. Cook potatoes in boiling water for 10 minutes. 2. Cut potatoes into thin slices. Arrange a layer of potatoes in the base of an ovenproof dish. Layer with leek, garlic, cheeses, and parsley. Season to taste. 3. Repeat layers 3 times, until all ingredients have been used, finishing with a layer of cheese. Mis the cream, milk, salt and pepper together, then pour over potato layers. 4. Cook in a preheated oven at 325 degrees for 1-11/4 hours, unles cheese is golden brown and bubbling and potatoes are tender. |
