Cheesy Potato and Onion Casserole |

This recipe is originally from an old cook book of mine 'Vegetarian Cooking Made Easy' by Veronica Vezza. It's a really hearty and tasty dish. I like to add some mustard to the cheese sauce to give it some kick. Serve with cabbage and sausages. Ingredients:
1 lb potato |
1/2 lb tomato |
2 large onions |
1 teaspoon herbs |
4 ounces margarine |
salt & freshly ground black pepper |
1 ounce margarine |
1/2 pint milk |
1 ounce plain flour |
4 ounces grated cheese |
Directions:
1. Preheat the oven to 375 degrees (Gas Mark 5). 2. Peel and slice the onions. 3. Slice the potatoes. 4. Skin and slice the tomatoes. 5. Place all in layers in a greased baking dish, seasoning and scattering herbs between layers. 6. Dot with margarine. 7. Cover and cook in oven for 50-60 minutes, until tender. 8. Make up the cheese sauce. 9. Remove the dish from oven and pour over the sauce, return to the oven for a further 15 minutes until golden. |
