Cheesy Potato and Broccoli Soup |

Easy recipe for a cream of broccoli soup using fresh broccoli and 1% lowfat milk. Perfect on a cold day! Ingredients:
1 bunch fresh broccoli |
4 tablespoons butter |
2 tablespoons potato starch |
1 tablespoon minced garlic |
1 small diced onion |
4 cups 1% low-fat milk |
1 cup prepared mashed potatoes |
1 cup shredded longhorn style cheddar cheese |
salt |
pepper |
Directions:
1. Steam the broccoli until soft, mash up and set aside. 2. Saute onions and garlic in butter until soft. 3. Add potato starch , stir until paste forms. 4. Slowly add in milk stirring constantly 5. Add Potatoes , cheese, salt and pepper , bring to boil, simmer for 15 minutes. 6. Enjoy. |
