Cheesy Onion Hash Brown Casserole

I’ve seen several hash brown casserole dishes that have some type of cream or condensed soup. This recipe offers an alternative and uses beef broth. I feel this allows the flavor of the potatoes, cheese and onions come out.
Ingredients:
2 lbs frozen hash browns (shredded)
1/2 cup butter, melted
1 (14 ounce) can beef broth
1 small yellow onion, diced
3 tablespoons instant minced onion
2 cups monterey jack cheese, colby cheese blend, shredded
2 cups sharp cheddar cheese, shredded
1 teaspoon salt
1/2 teaspoon fresh ground pepper
Directions:
1. Preheat oven to 350 degrees.
2. Spray 13 x 9 oven safe casserole dish with cooking spray (butter flavored works well with this dish).
3. Combine all ingrediants except sharp cheddar cheese and put in prepared casserole dish.
4. Bake for 30 minutes.
5. Top with sharp cheddar cheese and bake additional 15 minutes.
