Cheesy Nacho Chicken for Two (Or More!) |

Easy, Healthy, and Simple recipe that mimics the taste of chicken nachos, but in a healthier manner that is simple to adapt for one, two, or more people. (This was adapted from a Kraft Foods recipe.) Ingredients:
2 chicken breasts |
1/2 cup taco bell home originals thick 'n chunky salsa |
1/4 cup fat free sour cream |
1/2 cup 2% mexican cheese blend |
1/4 cup non-fat tortilla chips |
Directions:
1. PREHEAT oven to 400ºF. 2. COVER baking sheet with foil. 3. PLACE chicken breasts (if frozen thaw first) on baking sheet and make one large cut down the top center of each chicken breast. 4. SPREAD salsa across the entire top each chicken breast. 5. SPREAD a line of sour cream down the middle of each chicken breast. Do not cover entire breast as previously done with the salsa. 6. BREAK tortilla chips up into small pieces. and sprinkle on top of the breasts. 7. BAKE for 20 minutes. 8. REMOVE from oven and cover with cheese. 9. BAKE for 10 more minutes. |
