Richly flavorful dish for mushroom lovers everywhere! Ingredients:
3 chicken breasts |
2 cups sliced mushrooms |
1 chopped yellow onion |
1/2 cup white wine |
1 cup chicken stock |
1 cup grated mozzarella cheese |
1/2 cup grated romano cheese |
1/2 cup grated parmesan cheese |
2 -3 garlic cloves |
1 cup breadcrumbs |
6 tablespoons olive oil |
4 tablespoons butter or 4 tablespoons margarine |
1/2 cup buttermilk |
Directions:
1. Slice chicken breasts into strips. 2. Dunk in buttermilk, then cover in breadcrumbs. 3. Brown in skillet with olive oil. 4. Cover and set aside. 5. Sweat onions in skillet. 6. Add mushrooms and sautee with white wine. 7. Add garlic and reduce for 10 minutes. 8. Add chicken stock and reduce for 5 minutes. 9. Place browned chicken strips on top of mushrooms/onions and bake in 350 degree oven for 30-35 minutes. 10. During last 5 minutes, cover with three cheeses. 11. Serve over pasta. |
