This comforting meatloaf is filled with cheese. Recipe is from At Home Cafe, by Helen Puckett DeFrance. Ingredients:
1 1/2 lbs lean ground beef |
3 eggs |
3/4 cup salsa |
3/4 cup dry breadcrumbs |
1/2 cup celery, finely chopped |
1/4 cup onion, finely chopped |
2 teaspoons garlic, minced |
2 teaspoons dry creole seasoning |
1 teaspoon chili powder |
1 teaspoon ground cumin |
1 teaspoon dried parsley |
1/4 teaspoon black pepper |
1/2 lb mozzarella cheese, sliced |
Directions:
1. Heat oven to 350 degrees. 2. In large bowl, gently mix all ingredients except cheese. 3. Transfer half of meat mixture to 9x5-inch loaf pan. 4. Top with cheese; cover with remaining meat mixture. 5. Bake 60-70 minutes until meat thermometer inserted into center of loaf registers 170 degrees F. 6. Let meatloaf rest in pan 20 minutes before serving. |
