Cheesy Mashed Potatoes Piping Hot from the oven |

This recipe was passed on to me from a friend's friend who loves anything that combines cheese and potatoes! This is a staple in her house!! Ingredients:
1 (7 1/4 ounce) box roasted instant mashed potatoes (betty crocker brand) |
1 1/2 cups cheddar french-fried onions |
3/4 cup salsa (any variety) |
3 tablespoons sliced ripe olives or 3 tablespoons green chilies, chopped (optional) |
3/4 cup cheddar cheese, shredded |
Directions:
1. Pre-heat oven to 425F. 2. Follow the instructions on the box and prepare the potatoes for 2 pouches or 8 servings. 3. Mix in 3/4 cup of the onions. 4. Once you have this mixture ready, grease a 2 qt. 5. baking dish. 6. Then, spread this mixture in it. 7. Top with salsa, onions, olives and chives. 8. Bake for 3 to 5 minutes or until the onions turn golden in colour. 9. Remove from the oven and serve hot with sour cream and chopped fresh cilantro! 10. ENJOY! |
