Cheesy Mashed Potato Casserole |

Oh so good and so easy! A favorite at our home! Ingredients:
5 medium potatoes, peeled and quartered (i like to use yukon gold potatoes) |
1 (3 ounce) package light cream cheese |
1/2 cup sour cream |
1/4 cup green onion, minced |
2 tablespoons melted butter |
1/2 teaspoon salt |
1/4 teaspoon garlic powder |
1/8 teaspoon pepper |
1 tablespoon butter |
1 dash paprika |
Directions:
1. Cook potatoes in boiling water until tender; drain. 2. Mash. 3. Stir in cream cheese, sour cream, onions, melted butter, salt, garlic powder and pepper. 4. Place in a 2-quart casserole dish. 5. Sprinkle with paprika and dot with butter. 6. Bake, uncovered, at 375ยบ for 20 minutes. |
