A high-protein, low-carb vegetarian way to start your mornings! Also great cold for lunch - pair with mixed greens for a complete low-carb meal. Ingredients:
2 cups chopped spinach |
1 1/2 cups eggbeaters |
1 1/2 cups lowfat cottage cheese |
3/4 cup reduced fat cheddar |
1 1/2 tablespoons bacos bits |
Directions:
1. Shred cheese. Mix everything together and pour into sprayed baking dish. Bake at 350 for 40 minutes |
