This is so good. Great on crumpets, english muffins etc Ingredients:
2 eggs, slightly beaten |
1/4 cup lemon juice |
3 tablespoons butter |
3/4 cup sugar |
1 teaspoon lemon peel, fresh, grated |
1 (3 ounce) package cream cheese, softened |
1 dash salt |
Directions:
1. In heavy pan mix eggs, juice, butter, sugar and salt. Bring to a boil while stirring over low heat, then cook for 3 minutes more. 2. Remove from heat and cool. 3. Beat Cream Cheese and lemon peel. 4. When egg mixture is cool, blend into the cream cheese until smooth. 5. Store in the fridge. |
