Got this recipe from a friend and it is so yummy. Can make it as mild or spicy as you'd like. I serve over rice, but can serve over tortillas like nachos, too. Ingredients:
4 boneless chicken breasts |
1/4 cup chopped green bell pepper |
2 jalapenos, finely chopped |
1 large garlic clove, minced |
1 tablespoon olive oil |
2 tablespoons butter or 2 tablespoons margarine |
2 tablespoons flour |
1 1/2 cups milk |
1 cup shredded sharp cheddar cheese |
3 drops hot sauce, to taste (or a dash of ground cayenne pepper) |
1/4 teaspoon salt |
1/8 teaspoon ground black pepper |
12 -15 jalapeno pepper rings (optional) |
4 cups nacho chips (optional) |
Directions:
1. Spray shallow baking pan with cooking spray and place chicken breasts in pan. In a separate bowl, combine chopped bell peppers, jalapenos, minced garlic, and olive oil; Once thoroughly combined, sprinkle over chicken and place in the oven at 350 degrees F for 20 minutes. 2. While chicken bakes, melt butter in a saucepan. Once melted, add flour and stir for 1 minute. Whisk in milk; continue whisking until sauce thickens. Remove from heat and stir in the cheese, hot pepper sauce, salt and pepper. 3. Remove chicken from the oven; Pour cheese sauce on chicken and return to oven for an additional 20 minutes or until done. |
