This is an old, old recipe that is from a magazine clipping. I don't know which magazine. My mom has made these squares for as long as I can remember. A family favorite that has stood the test of time. Ingredients:
8 eggs |
1/2 cup all-purpose flour |
1 teaspoon baking powder |
3/4 teaspoon salt (or to taste) |
4 cups shredded monterey jack cheese |
1 1/2 cups cottage cheese |
1/4 cup chopped jalapeno pepper |
Directions:
1. Beat the eggs for 3 minutes. 2. In another bowl, add the flour, baking powder, and salt; stir to combine. 3. Add the dry ingredients to the beaten eggs; mix well. 4. Add in the cheeses and chopped peppers; stir to combine. 5. Pour mixture into a greased 13x9 inch baking dish. 6. Bake at 350° for 30 to 35 minutes. 7. Let sit for 10 minutes, then cut into squares. |
