From my local supermarket magazine Ingredients:
1 crusty cobb loaf |
20 g butter, softened |
1 small onion, finely chopped |
2 garlic cloves, crushed |
4 slices shortcut bacon, chopped |
250 g grated cheddar cheese |
1/2 cup chopped parsley |
60 g melted butter |
Directions:
1. Preheat oven to 180°C. 2. Place a large sheet of foil on a baking tray. 3. Make 5 cuts across the cobb loaf, cutting down to the bottom, but not right through. 4. Turn & make another 5 cuts crossways - do not cut through the bottom crust (you want to be able to push the filling into the cuts. but leave the loaf intact). 5. Heat butter in a frying pan and cook onion garlic & bacon for 5 minutes until golden. 6. Transfer to a bowl. Add 3/4 of cheese plus parsley, stir to combine. 7. Scatter mixture over bread and push down into cuts. 8. Drizzle with melted butter and wrap foil around bread to enclose. 9. Bake for 15-20 minutes, unwrap foil & sprinkle with remaining cheese. 10. Bake for a further 10 minutes or until the cheese is melted & golden. |
