Cheesy Ham and Apricot Toasts |

Another appetizer to be served ewith smiked salmon cocktail potaotes, shrimp and roasted red pepper canapes and glazed fruit skewers ewith strawberry yogurt - so tasty!! Ingredients:
24 baguette, slices (1/4 inch slices) |
2 tablespoons stone ground dijon mustard |
2 tablespoons mayonnaise, dressing |
1/8 teaspoon chipotle-flavored hot pepper sauce (optional) |
5 ounces sliced black forest ham, torn into bite-size pieces |
1/2 cup dried apricot, sliced |
1 cup canadian cheddar cheese, shredded (two year old) |
2 tablespoons green onions, finely chopped |
Directions:
1. Preheat broiler. Arrange baguette slices on a rimed baking sheet. Broil until lightly golden on both sides, about 1 minute per side. Cool to room temperature. 2. Blend mustard and mayonnaise; add chipotle sauce if using. Spread a thin layer on one side of each baguette toast. Divde ham and apricots equally between toasts. Toss cheese with green onions and sprinkle evenly over all. Broil 2-3 minutes or until cheese is melted. |
