Cheesy Draniki Or Potato Latkes On Steroids |

Every corner of the world has its own version of potato pancakes. This particular version puts a spin on traditional Belorussian draniki. They are heartier and juicier this way. Man cannot live by potatoes alone, eh? Read more ? Ingredients:
2 large potatoes, peeled and grated |
4 oz dry curd (farmer) cheese or california style cottage cheese |
2 eggs |
1 tsp baking soda |
salt and freshly ground pepper to taste |
all-purpose flour |
cooking oil |
Directions:
1. In a mixing bowl stir together shredded potatoes, cheese and eggs. 2. Add salt and pepper to taste 3. Add soda and mix well 4. Add flour in batches to get buttermilk-like batter 5. Let stand for a few minutes for soda to start working 6. Heat oil in a skillet 7. Stir batter well again. 8. Spoon batter in small batches on a skillet and fry over medium heat on both sides until pleasantly browned 9. Place on paper towel to drain the excess fat 10. Enjoy with sour cream or plain yogurt on the side 11. MOM'S VERSION: mix 1/2 cup sour cream (or yogurt), fresh chopped dill, 2 cloves of minced garlic and 1/4 tsp salt as a dressing |
