Cheesy, Crunchy Goldfish Chowder

This comes from Super Suppers and Desserts! from Kids Cooking Club. Family liked it, even the soup hating (at the time) 6 yo. This lends itself to a combination of vegetables, instead of just broccoli: broccoli, cauliflower, carrot. I used broccoli and cauliflower and blended it all with my stick blender before adding the soup and cheese. I also used 4 C chicken stock instead of the bouillon cubes.
Ingredients:
4 cups water
2 chicken bouillon cubes
2 cups diced potatoes
1 cup diced onion
1 bunch fresh broccoli, chopped
2 (10 1/2 ounce) cans cream of chicken soup, warmed
3/4-1 lb cheddar cheese, grated
salt, to taste
garlic powder, to taste
goldfish crackers, to taste
Directions:
1. Put water, bouillon cubes, prepared potatoes, onion and broccoli into soup pot and cook over medium heat, stirring occasionally, for about 30 minutes.
2. Add cream of chicken, grated cheese salt and garlic powder and simmer until cheese is melted and the soup is heated through.
3. Ladle into serving bowls and top each with a handful of goldfish crackers.
