Taken from the September 2009 issue of Today's Parent Ingredients:
2 ears corn, cooked (or 1 cup canned or frozen corn) |
1/4 cup cornmeal |
1/4 cup whole wheat flour |
1/4 teaspoon salt |
1/8 teaspoon baking soda |
3/4 cup cheese, shredded |
2 green onions, chopped |
1 egg |
1/4 cup milk |
1 tablespoon oil |
Directions:
1. Carefully lice corn kernels from the cobs and set aside. 2. Then, in a med bowl, whisk together cornmeal, flour, salt and baking soda. 3. Add cheddar cheese and stir, then mix in corn and green onions. 4. In a separate small bowl, combine egg and milk and whisk until frothy. 5. Add to corn mixture and combine well. 6. Heat oil in a large frying pan over med heat. 7. To form patties, scoop 1/4 of batter at a time and place in hot pan. 8. Flatten patties slightly with the back of spatula. 9. Fry 5-6 minutes, turning half way through, until patties are golden brown on each side. |
