Bite sized cheese and corn appetizers. Great with cocktails. From Rachael Ray. Ingredients:
8 ounces creamcheese,room temp. |
1c. shreaded pepper jack cheese |
1 lg. egg |
1/2c frozen corn kernals |
48 scoop-shaped tortilla chips(one 10oz. bag) |
chopped chives or cilantro for sprinkling |
Directions:
1. Preheat oven to 350. In lg bowl,mix cream cheese,pepper jack cheese,eggs and corn.. arrange chipson lg. rimmed baking sheet and place 1 tsp. corn mixture in eack Bake until the filling sets,about 20 mins.. Sprinkle the corn bites with the chives or cilantro. Serve warm. |
