I got this recipe from my mother who got it from my cousin Karen. Good on a chilly fall evening. Ingredients:
1 cup chopped potato |
1/2 cup chopped carrot |
1/2 cup chopped celery |
1/2 cup chopped onion |
1/2 cup chopped green pepper |
2 tablespoons butter |
3 cups chicken broth |
2 cups milk |
1/2 cup flour |
12 ounces grated cheese (i use meunster) |
Directions:
1. saute all vegetables in the butter. 2. add chicken broth and simmer for 15 minutes. 3. blend together flour and milk. 4. add to vegetables. 5. stir until thickened. 6. add cheese. 7. salt and pepper to taste. 8. can add 1 tablespoon of chopped parsley or other herb at this point. 9. enjoy! |
