Cheesy Chive Corn Muffins |

These warm, cheesy muffins get an extra punch of flavor from fresh chives. They make a great snack or side to any meal :) You could switch it up by substituting your favorite fresh herb(s) for the chives. Ingredients:
3/4 cup unbleached all-purpose flour |
1/2 cup corn meal |
2&1/2 tsp baking powder |
1 tsp salt |
1 tsp garlic powder |
1 tbsp brown sugar |
1/2 cup shredded aged white cheddar |
1/2 cup cottage cheese (small curd) |
1/4 cup shredded gruyère cheese |
1 large egg |
3/4 cup milk |
3-4 tsp chopped fresh chives |
butter or cooking spray for greasing the pan |
Directions:
1. Preheat your oven to 400 degrees Fahrenheit. Grease your muffin pan. 2. In a large bowl, combine the flour, corn meal, baking powder, salt, and garlic powder. 3. In a small bowl, combine the sugar, egg, milk, cheeses, and chives. 4. Add the wet ingredients to the large bowl and stir until just mixed; it's okay if there are a few lumps. 5. Fill each muffin cup 3/4 of the way to the top. Bake on the middle rack for 20-25 minutes, or until golden. You could also stick a toothpick into one; it will come out clean if they are done. 6. Serve warm with butter and honey :) |
