Tasty cheesy,chili rice made with leftover rice.
Ingredients:
2 c cooked rice
1/2 c sour cream
1 (4oz) can chopped green chilies
1 c shredded cheddar cheese
1 c chopped scallions
salt and cayenne to taste
butter
parmesan cheese
Directions:
1. Mix all but parmesan cheese and butter together.
2. Butter a casserole dish and sprinkle with parmesan cheese. Spread rice mixture in dish,sprinkle with more parmesan cheese and dot with butter.
3. Bake at 350 degrees for 20 mins.
