Tasty cheesy,chili rice made with leftover rice. Ingredients:
2 c cooked rice |
1/2 c sour cream |
1 (4oz) can chopped green chilies |
1 c shredded cheddar cheese |
1 c chopped scallions |
salt and cayenne to taste |
butter |
parmesan cheese |
Directions:
1. Mix all but parmesan cheese and butter together. 2. Butter a casserole dish and sprinkle with parmesan cheese. Spread rice mixture in dish,sprinkle with more parmesan cheese and dot with butter. 3. Bake at 350 degrees for 20 mins. |
