I used to take this to hunting camp and everyone loved it. Freezes well so you can pack it in on horseback. Ingredients:
1 1/2-2 lbs chicken tenders or breast meat cubed |
1 medium onion chopped |
4 stalks celery chopped |
2 cans cream of chicken soup( low sodium) |
1 16 oz can corn |
1 16 oz cream corn |
1 c milk |
1 medium brick velveeta cheese |
salt, pepper, garlic powder |
butter/ olive oil |
chicken broth |
Directions:
1. Saute chicken, onion, and celery with seasoning in oil or butter 2. Add about 2 cups chicken broth and simmer for 20 minutes 3. Add remaining ingredients 4. Cook on medium to low heat for 30 minutes stirring frequently so cheese doesnt burn |
