Cheesy Chicken Bake With New Potatoes |

This is an easy 'stick in the oven and forget' meal for busy weeknight evenings. Ingredients:
8 chicken thighs, skin on |
3 ounces soft spreadable cheese with garlic and herbs |
1 lb new potato, halved |
4 medium tomatoes, halved |
1 garlic clove, crushed |
1 pinch superfine sugar |
6 sprigs thyme, leaves stripped from 4 of them |
olive oil |
salt and pepper |
Directions:
1. Heat the oven to 400°F. 2. Carefully lift the skin on the chicken thighs and spread the soft cheese between the skin and flesh. 3. Sit the chicken in a roasting tin, skin side up and surround with the potatoes and halved tomatoes, cut side up. 4. Scatter the tomatoes with the garlic and a tiny bit of sugar. Scatter the thyme leaves and whole sprigs over the tin, season and drizzle with oil. 5. Roast for 45 mins until the chicken and potatoes are cooked through with crisp golden skin. |
