This meal is very easy! Ingredients:
6 ounces baby spinach |
4 cups minute brown rice |
16 ounces velveeta reduced fat cheese product, cubed |
1 lb chicken breast, cubed |
1 tablespoon extra virgin olive oil |
Directions:
1. Boil 3 cups of water. 2. Add the rice and spinach to the boiling water and bring back to a boil. Reduce to a simmer and cover. Cook for 5 minutes, then remove from heat and let stand for 5 minutes. 3. In a separate pan, heat the olive oil and cook the chicken until no longer pink. 4. Mix the chicken and Velveeta into the rice and spinach. 5. Serve hot. |
