I love this version of carrots. It is easy to make, packed with great flavors and goes well with everything. Enjoy Ingredients:
12 carrots |
1 small onion |
1 tablespoon butter |
1/2 cup butter softened |
1 large egg beaten |
1/2 teaspoon salt |
1 teaspoon freshly ground pepper |
1 clove garlic minced |
2 cups buttery crackers crushed |
1 cup shredded cheddar cheese |
Directions:
1. Preheat oven to 325 then clean and cut carrots into large pieces. 2. Cook carrots in boiling water until soft then drain well and mash. 3. Sauté onions over medium high heat in 1 tablespoon butter until very soft. 4. In a large bowl combine carrots, onions, 1/2 cup butter, egg, salt, pepper and garlic. 5. Mix well then spray an square glass baking dish generously with nonstick cooking spray. 6. Place carrot mixture in dish and top with crackers and cheese then bake 30 minutes. |
