Cheesy Broccoli Potato Soup

This is an easy hearty soup for a cold night. From Rachael Ray magazine
Ingredients:
1 bunch broccoli (about 1-1/2 lbs)
1 onion,chopped
1 large potato ,cut in 1/2 cubes
2 c whole milk
1 c shredded cheddar cheese
Directions:
1. Peel the broccoli stems and chop stems and florets into bite-size pieces.
2. In a large pot,bring 4 c salted water to a boil over med heat. Add the broccoli and cook till tender,about 10 mins.
3. Meanwhile,in skillet,heat 1 Tbs. extra-virgin olive oil over med. heat. Add the onion and potato and cook,stirring,till tender and browned,about 15 mins.
4. Stir into the pot along with the milk;warm through and season with salt and pepper.
5. top each serving with 1/4 c cheese.
