Cheesy Broccoli Potato Soup |

From 1001 Slow Cooker Ingredients:
1 quart chicken broth |
1 cup chopped onion |
1/2 cup finely chopped celery |
1/2 cup finely chopped carrot |
2 cups cubed idaho potatoes |
1/2 teaspoon celery seed |
1/2 teaspoon dried thyme |
2 cups small broccoli florets |
1 cup milk |
2 tablespoons cornstarch |
2 cups shredded cheddar cheese |
salt and pepper |
Directions:
1. Combine all ingredients except broccoli, milk, cornstarch, cheese, salt and pepper in slow cooker. Cover and cook on low for 6-8 hours, adding broccoli during last 30 minutes. 2. Turn heat to high and cook 10 minutes, stirring in the combined milk and cornstarch, 2-3 minutes. 3. Add cheese, stirring until melted, 2-3 minutes. Season to taste with salt and pepper. |
