Cheesy Broccoli Potato Soup |

Very good lower calorie option to traditional potato soup. We were very skeptical, but it has really impressed us. It was much creamier tasting than we expected. Ingredients:
2 tbsp butter |
1 cup chopped onion |
1/2 cup flour |
4 cup chicken broth |
4 cup fat-free milk |
16 oz frozen chopped broccoli |
2 cup potatoes |
1 1/2 cup shredded cheddar cheese |
1 tbsp worcestershire sauce |
1 tsp salt |
1/2 tsp pepper |
Directions:
1. Melt butter in large saucepan over medium heat, add onion and cook until tender. Add flour; stir until blended. Gradually stir in broth. Heat until slightly thickened. Add milk, broccoli and potatoes. 2. Cook over low heat about 15 minutes or until broccoli and potatoes are tender. Stir in seasonings and cheese (reserving some cheese for the garnish, if desired). |
