Cheesy Broccoli Potato Soup |

This recipe is from Southern Living magazine, January 2006. This is sure to warm you up on those chilly evenings! Ingredients:
4 tablespoons butter |
1 cup onion, chopped |
1/2 cup flour |
4 cups chicken broth |
4 cups milk |
16 ounces frozen chopped broccoli |
2 cups potatoes, peeled, diced |
1 cup cheddar cheese, shredded |
1 tablespoon worcestershire sauce |
1 teaspoon salt |
1/2 teaspoon pepper |
Directions:
1. Melt butter in a large saucepan. 2. Add onion and cook until tender. 3. Add flour; stir until well blended. 4. Gradually stir in chicken broth. 5. Heat until slightly thickened. 6. Add milk, broccoli, and potatoes. 7. Cook on low heat about 15 minutes or until potatoes and broccoli are tender. 8. Stir in cheese and seasonings. |
