This recipe is from Eating Well. We tried it and now it is a keeper. It is a good way to get more veggies in to the kids. It calls for fontina cheese, but I've used other cheeses such as cheddar and mozzarella. Ingredients:
1 lb. yukon gold potatoes, cut into wedges |
3/4 lb. broccoli crowns, chopped (4 cups) |
3/4 cup shredded fontina cheese |
1/2 cup nonfat milk, heated |
1/2 tsp salt |
freshly ground pepper |
Directions:
1. Bring 1 inch of water to boil in a large pot. 2. Place potatoes in a steamer basket and steam for 10 minutes. 3. Place broccoli on top of potatoes, cover and steam until the potatoes and broccoli are tender, 6 to 8 minutes more. 4. Transfer the broccoli to a large bowl and coarsely mash with a potato masher. 5. Add the potatoes, cheese, milk, salt and pepper and continue mashing until desired consistency. |
