very yummy on a cold winter day Ingredients:
2 tablespoons margarine |
1/2 cup chopped onion |
1/2 cup chopped celery |
1/2 cup chopped carrot |
2 tablespoons flour |
1/2 teaspoon dry mustard |
2 cups chicken broth or 2 cups water |
4 cups coarsley chopped broccoli |
2 cups milk |
2 cups shredded cheddar cheese |
Directions:
1. Melt margarine in a saucepan, add onion, celery & carrot,cook until softened, about 3 min. 2. Add flour & mustard, cook stirring for a minute or two. 3. 'Stir in broth & broccoli, bring to a boil. 4. Simmer covered, stirring occasionally until broccoli & veggies are tender, about 10 min. 5. Place broccoli mixture in a blender & process until smooth. 6. Return to pan & stir in milk. 7. Bring to a boil over medium heat. 8. Add cheese, stir just until melted. |
