Cheesy Broccoli Breakfast Casserole |

This is a brunch or breakfast casserole that is easy to fix and has everything you need in it to start the day! It can be made the night before and refrigerated. Ingredients:
1 pound ground pork sausage |
1 small onion, chopped |
1 (16-ounce) package frozen broccoli cuts, thawed |
2 cups shredded cheddar, divided |
8 large eggs, lightly beaten |
1 cup ricotta cheese |
1/4 cup milk |
1 teaspoon pepper |
1/2 teaspoon salt |
1 tomato, sliced thin |
Directions:
1. Cook sausage and chopped onion in a skillet over medium-high heat, stirring until sausage crumbles and is no longer pink; drain. 2. Toss together sausage mixture, broccoli, and 1/3 of the cheese. Spoon into a lightly greased 13- x 9-inch baking dish. Stir together another 1/3 of the cheese, eggs, and next 4 ingredients; pour over broccoli mixture. 3. Sprinkle with remaining 1/3 of the cheese. Arrange tomato on top. 4. Bake at 350° for 30 minutes; uncover and bake 15 more minutes. Let stand 10 minutes before serving. |
