Cheesy Broccoli And Cauliflower Casserole |

My mom and I make this every Thanksgiving and Christmas and has been a long-standing favourite in our family. The recipe is easy to double if you want it for a main meal or potluck: just double everything EXCEPT the eggs. Ingredients:
4 cups each broccoli and cauliflower, in bite size pieces |
2 eggs |
3/4 cup of mayonnaise |
1 medium onion, finely chopped |
1 can condensed celery soup |
1 cup old or medium cheddar cheese, grated |
bread crumbs to taste |
Directions:
1. Preheat over to 350F 2. Distribute cut veggies evenly in casserole dish 3. Beat eggs in separate bowl. Combine with mayo, soup, onion, and half of cheese. 4. Pour mixture evenly over veggies. Sprinkle remaining cheese and breadcrumbs over casserole 5. Bake uncovered 40 minutes until bubbly hot. |
