You can save some calories by using non fat cheese. I for one, dislike non fat cheese so much that I'll take the calories. Ingredients:
4 rudys organic spelt tortillas |
8 ounces lean ground beef |
1 cup shredded cheddar cheese |
2 wedges light swiss cheese llaughing cow |
2 tbsp green onion |
1 tsp taco seasoning |
Directions:
1. In a skillet, add onion and ground beef. Cook until just brown. Add sour cream, cheddar, and taco seasoning. Stir well. 2. Lay tortilla flat and spead 1/2 wedge on half of each tortilla. 3. Place tortilla in hot skillet sprayed with non stick spray, with cheese spread up. Top this with the cheesy beef. Use a spatula to fold the tortilla in half. Press down to seal-cook for 2 minutes. Flip over and grill on other side for 2 minutes or until bown on both sides. Cut into 4 wedges and serve. Dip in a little fat free sour cream if desired. |
