Cheesy Beef and Tomato Bake |

Oh this is comfort food to me. I love rice casseroles with meat and this one is no exception. Ingredients:
1 lb ground beef |
1 ounce dry onion soup mix |
2 medium tomatoes, chopped |
1 1/2 cups uncooked instant rice |
1 1/2 cups water |
1 medium tomato, sliced |
4 ounces colby-monterey jack cheese, shredded |
Directions:
1. heat oven to 400. 2. Spray 8-inch square baking dish with nonstick cooking spray. 3. Cook ground beef in large skillet over medium high heat until thoroughly cooked, stirring frequently. 4. Drain. 5. Stir in soup mix, chopped tomatoes, rice and water. 6. Bring to a boil. 7. Pour into sprayed baking dish. 8. Cover tightly with foil. 9. Bake at 400 for 20 to 25 minutes or until liquid is absorbed and rice is tender. 10. Uncover; top with tomato slices; sprinkle with cheese. 11. Bake uncovered an additional 10 minutes or until cheese is melted. |
