Cheesy Beef And Spinach Casserole |

Ingredients:
1-1/2 lb ground beef |
1 medium onion chopped |
3 garlic cloves chopped |
2 cans drained (4 oz) mushrooms |
1 tsp salt |
1 tsp oregano |
1/2 tsp pepper |
1 tsp garlic powder |
1 tsp smoked paprika |
1/2 cup chopped (drained well) roasted peppers |
or 1 red or green pepper chopped |
3 pkgs (10 oz) frozen spinach, thawed & squeezed well (i just 2 large bags of fresh spinach, cooked in water till wilted and squeezed the heck of of it) |
1 can of condensed cream of mushroom or celery soup |
1-1/4 cup sour cream |
8 ozs shredded mozzerella cheese |
1/2 cup parmesan cheese |
1 bag of wide egg noodles |
4 tbsp butter |
paprika, parsley |
Directions:
1. In large skillet, cook beef till most of pink is gone, drain well 2. Add about 1 tbsp olive oil to meat and then add chopped onions, garlic, mushrooms and peppers and cook till tender (do not overcook) 3. Add seasonings and stir 4. Add soup, spinach, sour cream and blend thru well 5. Add mozzerella cheese & Parmesan 6. Transfer to a greased baking pan(9 x 11) 7. Bake uncovered for 30 minutes at 350 till hot & bubbly 8. In the meantime, cook noodles in salted water and drain well done. 9. Add butter to hot pan and add parsley & paprika 10. Stir in noodles and just cook all is mixed 11. serve over buttered noodles |
